First, I want to tell all those that made a post on the first carnival: “I enjoyed reading your posts”.
Stewed Down Squash w/Onions.
A little bacon drippings in the bottom of a skillet (just enough to cover the bottom) – 1 medium onion peeled and cut in slices or medium diced – 3-4 medium yellow squash cut into pieces about 2 inches long and 1/4 inch thick. Squash does not need to be peeled, just wash thoroughly . Salt and pepper to your taste.
On heat about halfway between medium and low cook onion until it changes color, add cut up squash and maybe 1/4 cup water. Cover and let simmer until squash are done. Check and stir often. After squash are done, if you want them a little brown remove lid, turn up heat and let most of the liquid evaporate, stirring frequently to keep from burning.
Recipe can be increased to meet the needs of your family. Keep in mind that squash shrink quite a bit when cooked. Enjoy.
